Is the direction of the water spout adjustable or is it only out of the wider side?

Unfortunately, the spout is only adjustable to 3 sides - the 2 long sides and one short side.  If you put your dishrack on the left side of the sink, like I do, it has to sit backwards with the cupholders against the wall, where you can't reach them, and the huge wineglasses rack sticking out in front where you'll run into the wires.  Really poor design!

Is this stainless steel? Does it rust?

I do not know the metal type but mines rusted. I have the old version of this product that I purchased at Bed Bath & Beyond over seven years ago and it did rust on the inside rack that holds the plates up. The rust has gotten so bad that I am looking for a replacement now because it’s too much rust and embarrassing looking. It is a super convenient dish dryer but the rust has pushed me to look for a better product. I think I first noticed the rust around year three at the joints and now it’s spread a few inches from the joints. It’s time to replace due to the rust.

if I buy any of the simplehuman products off Amazon, do they still have their 5 year manufacturer's warranty?

can the wooden knife block be removed? I would like to use that space for more utensils....

Yes, the bamboo insert just pops out.. The plastic thingie in which the bamboo insert is placed is also removable.  But I find the knife block very useful.
