how good is your stabilizer

I use mine on a fishing kayak and even on rough waters I have crisp videos with minimum stability issues. I love my camera. Hope this helps.

Does the camera output a clean hdmi signal with no text/icons, suitable for livestreaming?

Yes, when plugged in to the tv with a micro HDMI cable shows a clean image with no icons on the tv but on the screen of the akaso camera.

How does this work with snorkeling - do you have to hold it the entire time? Is there some sort of strap that prevents it from dropping...?

You can attach a yellow floatie tool that will prevent it from sinking. But you do need to hold it. Alternatively, you can buy a strap for your chest or your head. You can attach the camera to these straps and swim around hands free
