Would it be easy to remove? Can I use for sneakers?

My opinion not for sneakers. These are for hard sole shoes.

Would these fit 3" length and 2" width heels, 1/8th thickness?

It should, I had to return it cause it was too big for the sandals I needed them for. These are for “shoe” heels not for pumps or sandals which the heels are narrower, so I found some other ones that has both front and back heel grips and it’s thinner and u can also trim to the shap u need. These are super thick I would imagine very hard to trim.

will these work with Birkenstock sandals?

Don't think so, thin tough rubber heal, a bit hard to cut, put on dress shoes and started to delaminate after a couple times, need to re-glue

do you think these would work to replace a missing heel on a cowboy boot?

Hello; I would think so, it is built from tuff rubber like what is used on the bottom of the shoes. The only issue you need to be careful if trimming needed, if it does not fit perfectly on your boot you may have to trim it to fit, Not a too difficult, just take your time when trimming. What I did after trimming. I used A quality file and filed the edges a bit in an angle shape. Made it looked very professional. Also even though it comes with a double sided tape I used some adhesive/Cement to make sure it doesn’t come off under hard conditions use.
