Double. They are cheap, and incredibly sharp. I replace mine every 6 mos or so. 13-15 bucks.

I wasn't aware that the blade was flexible. The blade doesn't seem flexible at all. These are the best knives I've ever used in my kitchen, and I have knives that cost $60.00.
