How do you securely hang this from the ceiling, so that it is low enough for a small baby to see it?

I simply used a tac and as my son got older, I raised it higher so he could not tug on it. He is 2 and still has it hanging in his room. He LOVES it and I can promise both you and your child will too :) Great alternative to music mobiles that I do not really care for. This is very stimulating and grows with the child.

What colors are the birds?

The birds body is white, wings black / dark gray with red at the birds neck. Just beautiful. It iis light weight so the slightest air movement sets the birds a flutter. Love the mobile

How many swallows are there? The Flensted website has 5 birds not 3.

The one I bought has three swallows. The mobile occupies a horizontal space of 14 inches in diameter, and the swallows have a body length about 4 inches and wingspan of about 6 inches (depending on how you bend the wings -- the swallows are flat when you take the mobile out of the box).

How much assembly is required?

None really. The wings need a little bit of folding along crease lines. This is a lovely delicate paper mobile that my granddaughter loved watching when air currents caused movement.
