can it seal in liquids?

I put my liquids in the freezer for a while. Then seal when the liquid is more of a solid.

Can you heat seal a bag without vacuuming out the air from the bag. If so can you use any bag to heat seal ?

You can seal bags without vaccuming the air out. I also reseal potato chip bags, brown sugar bags, etc without having to put the in foodsaver bags. any food that comes in a bag can usually be reseal with this.

What is the max width of bags it takes?

11-7/16 is the size that came with my foodsaver and it is so tight that you can hardly get it in the slot for it.If you can buy 11-1/4 bags they would be easier to deal with.

will this unit hold the bigger commercial rolls

no, it does NOT. Just cut off enough to make your next "bag". (You can also roll 25-30 feet off a large commercial roll & store this smaller amount in the compartment on the 4840.)
