Does the bag crinkle?

Yes, the bag and the potato chip crinkle.

Is this a real pusheen

Ours (JBSuperStore) are the real Gund Pusheen.

It is huggably soft like a plush animal, however it is not the "squishy" filling like the newer log-shaped Pusheens.
