The probes are waterproof, connected to the base by heat-resistant cables protected by a wire mesh. To use for roasting meat: stick a probe into the middle of the meat, without touching bone. Put the meat in the oven, with the cable coming out of the oven (oven doors are not such a tight fit as to prevent this; but be careful that the cable doesn't get damaged). Start the unit, and take the receiver to wherever you are. Set it to beep when the meat is done. You need to have a vague idea of how log it will take to plan your meal, but you don;t have to worry about timing for the right doneness. I haven't used the new one for actual cooking yet, but have tested and checked it. For use in cooking meat, most meat thermometers including this one allow the type of meat and doneness to be set; e.g., beef, rare. I prefer to work on the basis of temperature and ignore these settings. For example, the thermometer wants to cook rare beef to 60C; my family prefer 52C. If you know what temperature gives the results you like, set the temperature, not the preset settings. Accuracy: the thermometer claims to be accurate within +/- 1C between 0 and 100C, and 1.5C outside this range. This is typical for home digital thermometers for most uses, and fine for cooking. The base displays the temperatures of the two probes. It has a tiny on/off switch (switch off when not in use to avoid draining the battery) and a Fahrenheit/Centigrade switch. The receiver has the main controls. Set tyoe of meat and taste (doneness), os set the desired temperature manually. The unit will beep when the temperature is reached. There is a switch to display and set channel 1 or 2 (the channel selected is displayed at the top). There is a MODE button to toggle the display between Fahrenheit and Centigrade; hold it down for 2 seconds to set the temperature (the MEAT and TASTE buttons function as up and down). ON TEST: the temperatures displayed were within 0.5C at room temperature; The variation was due to the probes; swapping them swapped the temperature displayed for channels 1 and 2. The temperature shown was very close to 100C in boiling water. Comparing with a room thermometer with stated accuracy +/- 1C, and a room thermostat display: This thermometer displayed 22.0C and 21.5C. Swapping the probes: 21.4C and 22.1C Room thermometer: 21.0C (steps of 0.1C) Thermostat: 20.5C (steps of 0.5C) The thermometer comes with two clips which I found mysterious; a Google search for ["meat thermometer" clips] reveals with pictures that they are to help position the probes on the bars of a barbecue. CONCLUSION: satisfactory performance. Possibly reading slightly high at room temperature, but fine for cooking, and likely to be within +/- 1C as specified (not compared with an accurate lab thermometer). NIGGLES: - one of the sockets is a bit iffy on my unit; the probe had to be unplugged and plugged in again firmly for it to read properly. This could get worse with use (or settle in and work properly!) - The F/C switch on the base is similar to the on/off switch, and can easily get mistaken. I only use Centigrade, so covered it with tape. It might be better located inside the battery compartment; do people ever need to switch units? I'd also prefer the F/C swap on the receiver to be a tiny switch on the back, rather than an easily-pressed button. NOT TESTED: battery life. No reason for concern, I'd expect it to last for ages. Ho acquistato questo termometro da barbecue approfittando di uno sconto (pagato poco meno di 29€) più per curiosità che per altro, con l’idea che molto probabilmente lo avrei restituito. Mi sono invece ricreduto, ed ora lo uso su un forno professionale ma sprovvisto di sonda a cuore con buona soddisfazione. Nella scatola sono presenti già due sonde, Il display del termometro è facilmente leggibile ed interpretabile. Devo ammettere che questo termometro si è dimostrato una piacevole sorpresa, dimostrandosi indispensabile in più di una occasione, e facilitando di molto certe operazioni in cucina. Modifico la recensione d 5 stelle a 1 perché si è rotto dopo poche volete che l’ho usato. è il mio primo termometro digitale e fa esattamente cosa deve fare, le due sonde permettono di misurare precisamente la temperatura dove si vuole, la lettura senza fili permette anche di cucinare in un posto diverso da dove si sta, senza mai perdere di vista la cottura
