Can this be used to power led strips on cars?

Absolutely. That's what I've used it for. Just make sure the amp requirement of your LED's is under the rated Wattage of 18 Amps.

There was no manual but the site has a diagram to show how to hook up everything. I didn't hind it hard at all. This is small but a great unit.

you need to count the watts of the lights you connect , such as if one led bulb is 1.2 watt, then 10 led bulbs is 12 watt, the controller of the link that we sale is 12V 18A max , then the max loading watt is 12Vx 18A = 216 watt, the same as the power supply, 12V 10A power supply max load is 120 watt. hope this can be helpful.

How do you dim a color with out them fading in and out?

There are 2 white button with sun sign on the top of the remote , thats the button can change the brightness of single color lighting effect you can press the colored button on the remote to choose one single color then use the brightness adjust button to change the brightness of the lighting effect,
