what is the expiration date

Depends on the item - they are constantly changing depending on when they come out of the factory.

Does it have to be refrigerated?

It says it does, but if you use it fast it has enough vinegar in it to be alright I am thinking. I used to leave things out in the tropics because I had no room in the small refrigerator. Never had a problem with anything.
