Does this work for coffee and sugar?

I wouldn't use it for coffee or sugar. I think it works best for dry pasta and cereal. I think stuff like sugar would spill out.

Has anyone used these in the laundry room for scent beads?

The three flappers inside the plastic tube is sturdy enough for scent beads yet flexible enough to meter the medium out. I use this for laundry detergent, and at times the detergent has large clumps and they pass by with ease. Meaning, no hang up inside or having to poke it to move. Hope this is enough info for you to make a decision

Does it seem possible to rig the mount so that it uses a magnet instead of screws? I am hoping to put a single dispenser on the side of the fridge.

If you use strong magnet will work just fine

Would this work for dog food? 1/4 cup feedings for a small dog...

I wouldn't. Only because I prefer to keep my pet food in an airtight container and use a measuring scoop when feeding
