Is a conection line included for natural gas? What is needed for conection to natural gas?

you will need a 3/4 inch gas line connector, I have also installed a shut off valve, and prefer a "quick connect" type so I can disconnect to clean. A good quality connector ranges between $75.00 for regular and $150.00 for a "quick connect

If used indoors you most certainly can simmer If outdoors as long as it is not very windy or well protected from the wind one can simmer

Does it come with propane fittings and can it use propane in a food truck?

Buy the one that is set up for propane already

Can I keep this outside as an outdoor burner on the deck if I cover it? Will it work in the winter?

I don't see any reason why not. Covering it would be no different than a gas eye on the side of a standard grill. Outside temp should not be relevant. Great burner BTW, I'm very pleased so far.
