The grid is just on one side. I use the plain side for projects when I don't want the grid background.

No, it has a gray, opaque background. You may want to consider a glass mat if you need to see through, or maybe one of the big Omnigrid quilter’s rulers.

Will it heal from exacto knife cuts?

Yes. That's what my students use it for all the time. It doe not "heal" like it was never cut, but it only looks like scratches. I bought my last one 2 years ago, and it is still fine to use.
