Slice of culture & history with recipes
I am pleased to have this cookbook because the history and blend of cultures in these islands is rather unique. The author describes each of the three primary cultures - Indigenous, plus Christian and Arabic and how their ancestors were brought there as slaves or indentured servants. I wanted to learn about the food traditions through that lens. This is well-written and detailed enough to understand the complexities of the islands history and cultures without being over-whelming. She has adjusted some recipes to use ingredients readily available in markets here is the USA. She also explains those substitutions so you could make the dish in the traditional way if you have access to a market selling the unique Trinidad and Tobago ingredients. For a special touch, she describes various cultural events with a calendar listing the time of year they occur. So you could organize a visit to participate in a chosen event. I love cookbooks that put food in context of its evolution and role in a culture. My only comment on the recipes is that many are spicy hot. I have to omit those hot ingredients but I still enjoyed the flavors of the resulting dishes I made. I also discovered a few different ways of combining some of my favorite ingredients with delicious results.

Vegetarian Friendly, Well-Organized Index, Variety
I bought the Kindle Version today. I am African American and grew up around a lot of Caribbean folk. Recently found I have Trini heritage and I am a vegetarian so this book is wonderful for the nostalgia and for learning about other parts of my culture. As a vegetarian there are tons of recipes to try and not get bored. For the non-veg recipes, the author offers lots of suggestions and subsitutes for people who don't eat meat or certain kinds of meat due to religion Hindu, Muslim etc, which is great. I also appreciate that these recipes are quite simple/few ingredients but look delicious. I appreciate that the index is categorized by ingredient and food type (sweets, rices, stews, cuisine type Indo-Trini etc, vegetarian) which makes it very accessible and easy to meal prep/plan recipes with similar ingredients. Looking forward to cooking/trying some of these recipes. Fav recipes looking to try: Trini Chow Mein, Rice & Peas, Trini Dal, Channa Aloo, Rum Raisin Ice Cream, Sorrel, Soursop, Carrot Cake, Okra Rice, Doubles, Dalpuri. Hope this helps!

Book falls short
I bought this book based on the reviews. I was born and raised in Trinidad, and was excited to have the recipes at hand. The recipes were nothing special, the flavors were there but there are better recipes online.

Trinidad is cooking tonight!
Love this book. I wanted to have a representation of different carribean cuisine books and cooking in my home and I definitely am on my way. My favourite is the roti, and Dalpuri, wow! Learning the subtle cooking differences from one carribean island to another is fascinating. Great book. I plan to buy this one again as presents.

Love it - great addition to my cookbook collection
Finally found an Accra recipe that is full proof! Nice book with a bit of history and culture. Some recipes that I hadn’t come across before, has you covered from making green seasoning to desserts (yes a black cake recipe)

Good Book
Loads of good recipes including Roti, curried shrimp, pepper sauce and Indian sweets etc. I would have liked photos for ‘every’ recipe but that’s my personal preference. Photos are still in the book. I would definitely recommend this book if you love Trini food.
