Can I use the planet waves 9V power adapter ?

absolutely not ! The fly 3 runs on 6volts /positive tip . When you buy the fly on amazon, the planet waves adaptor is suggested . My friend bought the fly to his son and pluged it on a 9 volts adapter...... he blew the amp . You may pay a little more but buy the right adapter, it works well and saves batteries

Why is there what appears to be an Ethernet connector just above the power adapter plug?

Yes, for the extension cabinet, which expands this from 3w to 6w. The 3-pack is a good deal, because a) you get better volume but mainly because b) it includes the power supply, which means that c) the extension cabinet is virtually free.

does it come with a cable

The package I received was the amp only. The instrument cable and power supply I had to purchase separately. My amp was in original packaging.
